Poor Mom's Dinner



My son's enjoy eating chicken heart. I usually cook the chicken heart in a savory and spicy "adobo" sauce but this time I changed it a few notches

Poor Mom's Dinner

You will need:
  • Chicken heart (2 packages)
  • 1 onion sliced
  • 1/2 ginger sliced thinly
  • 2 T. Tahini sauce (sesame paste)
  • 1 T. sesame oil
  • soy sauce
  • sugar to taste
  • 2 clove garlic thinly sliced
Steps:
  1. Arrange all your ingredients neatly for easy access
  2. Saute your onions until it turns transparent
  3. Sprinkle with sugar to caramelize faster
  4. Add garlic,ginger
  5. Set aside
  6. With the same pan add the chicken heart and continue to cook until the chicken is cooked 10-15 minutes
  7. Add 1/4 c. water from time to time to make sure the chicken does not dry up
  8. When your chicken heart is fully cooked add soy sauce, tahini, sesame oil, 1 T. vinegar to balance the flavor
  9. Add sugar to sweeten (similar to teriyaki)
  10. Continue cooking until sauce thickens
  11. Add onions,ginger,garlic
  12. Enjoy

Arranging your ingredients will help with your success in cooking

sWeEt TrEaT


I have been taking my boys to Apple Bee's on Wednesday for Kids night dinner. My boys always request for the cookie dessert and this is my version....It is very simple to make and much cheaper
  • Two scoops of your favorite ice cream (I chose coffee)
  • 4 warm choc. chocolate chip cookies
  • can whipped cream
Warm cookies in microwave for 60 sec. top with favorite ice cream, add whipped cream...share with your loved ones or enjoy yourself

Squid?


I love seafood! I grew up surrounded by water and my dad was a fisherman. One of his favorite dishes when we go out to Chinese Restaurant was Squid with Ginger & Green Onion. Here is my version to this dish:

Ben's Fav. Squid with Ginger & Green Onion
  • 2 tubes calamari or squid sliced thinly
  • 2 T. fresh ginger sliced thinly
  • 2 stalks green onion sliced thinly
  • 1 T. sesame oil
  • 2 T. oyster sauce
Saute ginger, green onion & onion. Once the ginger aroma releases turn off heat and set the veg. aside to cool. Using the same pan add sesame oil and turn up heat once it starts to smoke add calamari and stir. Watch carefully as calamari cooks quickly. The calamari will be cook once the color changes add ginger,onion & oyster sauce.

JuSt GoTta hAvE mY SpAM!


Yes, I am aware Spam is not healthy for you But I grew up with this processed meat and I just gotta have my SPAM! I also grew up having kimchee as an appetizer and this one was made with radish (daikon) OMG! Kimchee especially radish (daikon) is a Korean dish and is also for the brave and willing! It is really good stuff once you've had it with your meal you will never go back!

CRAV'N FOR CHOCOLATE?


Have you ever craved for good chocolate chip cookie and ended up getting a crispy one instead? Well this recipe is simple and moist. I used a cake box recipe and this has been one of my fav's

Bobbie's Yum-O Xtra-choc-cookie


  • 1 package (18.25 ounces) chocolate cake mix
  • 8 Tablespoons (1 stick) butter soft
  • 2 Large eggs
  • 1 cup dark chocolate chips
  • 3/4 cup walnuts (optional)
  • 1/4 cup toffee bits
  1. Place a rack in the center of oven and preheat the oven to 350F. Set aside two ungreased cookie sheets
  2. Place the cake mix,melted butter,eggs and vanilla in a large bowl. Blend with an electric mixer on low speed for one minute. The dough will be smooth and thick. Fold in the chocolate chips
  3. Drop tablespoon of the dough 2 inches apart on the ungreased cookie sheet. Sprinkle walnuts & toffee chips on top of each cookie
  4. Bake the cookies until they have set but still soft 10-14 minutes. Remove from oven and cool cookies completely

always use caution when baking cookies, I don't depend on the required cooking time as one's oven varies. After 8 minutes I like to take peek to make sure my cookies are Beautiful and not burning especially when it comes to chocolate chocolate chip cookies as the dough is dark for you to see.
